Nothing that's come out of my kitchen has ever made it onto this blog... until today.
When I saw on Pinterest that you can make cupcakes with only 2 ingredients, I had to try it for myself.
When the future Mr. Frosting pronounced that cupcakes made of diet soda sounded gross, I had to find out what these cupcakes would taste like.
Stephanie at Lady With The Red Rocker used strawberry cake mix and diet 7 up. Since diet Sunkist is my favorite, also seen here and here, I mixed it with white cake mix to create a fluffy creamsicle-inspired dessert.

Diet Creamsicle Cupcakes
Ingredients
- 1 box white cake mix
- 1 can diet Sunkist
- optional: zest & juice of 1/2 an orange
- Fat Free Cool Whip (or store brand)

Mmmm - I'm not sure about the 'diet' sunkist but they look delicious! I wonder if they taste slightly different or exactly the same with normal sunkist?? Just followed you in Pinterest too :)

Deletethey taste better with normal sunkist that's all i've used when i make them and i add orange cream frosting it's the kind you mix the powder and frosting together it's not for everyone but hubby really loves orange cream

ReplyDeleteOooh, good combo! I use stevia sweetened soda to avoid the synthetic sweeteners, and they do have an orange flavor so YAY!

ReplyDeleteI made these also using lemon cake mix and diet 7 up. They do tend to get gooey. I have seen that you can use regular pop though.

Just made these -- used a yellow cake mix and 14 oz of the diet soda (since I bought a 20 oz bottle and the batter looked a little thick). Also added sugar-free vanilla pudding to the whipped cream -- about 1/2 package. My calculations have the calories at 132 each -- yum!

ReplyDeleteThis is a classic Weight Watchers recipe. In the past I have used half a can of soda and added a small can of mandarin oranges. Then for the frosting, add half a package of sugar free vanilla pudding powder and a can of crushed pineapple (drained). FANTASTIC!

ReplyDeleteok, so i just made this, but i think i messed up... i added water, eggs, oil like the box says to do. But im thinking the soda replaces all of them, or maybe omit the water? Any helpful tips?
ReplyDeleteHi Deanna, couldn't find your email to respond. To answer your question: yes, the soda replaces the water/eggs/oil. So all you need are two ingredients! 1) cake mix powder, 2) can of diet soda. Hope you get to try the recipe again, xo
DeleteDeanna, thank you for asking this question. I looked to see if the soda replaced everything but the cakemix too. I make Banana Bread from a spice cake mix by using 3 bananas in place of the water and adding nuts too.
DeleteI'd like to try this because my granddaughter is allergic to eggs. I tried an eggless cake recipe last month (cake mix, greek yogurt, water) and it tasted great, although the cupcake paper was hard to peel away from the cupcake. I'm wondering if your recipe sticks to the cupcake paper?
ReplyDeleteI am a member of Weight Watchers and these are the only kinds of cakes I make anymore. They are super moist and you can use any flavor combo. For example, chocolate cake mix + diet dr. pepper or diet root beer, white cake mix + diet 7-up, etc. I usually blend my free cool whip with a pudding or gelatin of a corresponding flavor, orange cake with orange frosting.

ReplyDeleteThis is a Weight Watchers Recipie! We make bundt cakes like this. I do milk chocolate cake with diet root beer, and we did a lemon cake with diet sprite or 7up. We almost never put any frosting on them

ReplyDeleteI made these today with a sugar free yellow cake mix. I also added an egg, thinking it might help the "gooey" texture. I used DietRite orange soda. I also added a couple of drops of orange extract...........they are perfect and AMAZING! This will be my new go-to recipe.

ReplyDeleteI used about 2-4 tablespoons per cupcake. One 8oz container was enough for the 16 cupcakes.
DeleteI've made these twice so far and they are in my oven again as we speak :) I use normal Sunkist and not Diet Sunkist, and they turn out just fine for me.

DeleteI used mini cupcake pans and the cupcake fell apart. They were moist and very tasty but I don't know why they didn't come out of the mini wrappers easily? Over all, everyone loved them.

I made the cupcakes tonight and the same thing happened to me, the cake stuck to the cupcake liners and it was very difficult to eat. Delicious but mess and had to dig it out of the liner, not fun. I thought to do it again and spray muffin tray and just put cake in muffin pans without the liners. Love the easiness of it all. Margaret in Colorado
